The almond cake with lemon is a light dessert with a fresh taste, given the combination of almonds with lemon juice, it is suitable for any time of day.

INGREDIENTS:
- 180 g of 00 flour
- 120 g of peeled almonds or almond flour
- 3 eggs
- 1 lemon (juice and grated zest)
- 100ml seed oil
- 8 g baking powder
- 130 g of sugar
- 5 g vanilla extract
- 40 g almond fillets or flakes (for the surface)
- granulated sugar to taste
- icing sugar to taste
METHOD:
- Put the almonds in the food processor with 30g of sugar and blend until obtaining a fine flour; alternatively use almond flour to skip this step.
- In a bowl, beat the eggs with the remaining sugar (100 g or 130 g if you are using almond flour), mix with an electric whisk and add the seed oil.
- Combine the almond flour, the grated rind, the juice of one lemon and the vanilla extract.
- Mix everything with an electric mixer, add the flour, the yeast a little at a time and mix well.
- We line a round pan with oven paper and pour the dough. Level with a spoon, decorate with almond fillets or flakes and a little granulated sugar.
- Bake the cake in a preheated oven at 180°C for 30-35 minutes.
- Let the freshly baked cake cool down and decorate with a little icing sugar.
