CAPRESE CAKE WITHOUT BUTTER

The caprese cake is a sweet of the Campania tradition . It's a chocolate and almond flour cake that conquers everyone with its delicious simplicity and soft heart. It has the particularity of being a gluten-free cake, as it is prepared with almond flour. Furthermore, this version is also perfect for lactose intolerant or for those with cholesterol problems, because it is without butter.

INGREDIENTS:
  • 180 g almond flour
  • 140 g dark chocolate
  • 130 g sugar
  • 120 g seed oil
  • 3 eggs
  • 10 g bitter cocoa
  • 2 g baking powder

METHOD:

  1. Cut the chocolate into pieces and melt it in a double boiler or in the microwave, keep it aside.
  2. Beat the eggs with the sugar for 5/10 minutes until they are clear and frothy, add the seed oil, the melted chocolate and mix well.
  3. Sift the cocoa and baking powder and add them to the mixture a little at a time.
  4. Also add the almond flour, mixing well.
  5. Grease with oil and flour a springform pan of about 20-22 cm in diameter and pour the mixture inside, leveling it well with a spatula or the back of a spoon.
  6. Place in a preheated oven at 180° and cook for 40 minutes.
  7. Allow to cool for about 30 minutes before removing the cake from the mould.
  8. Decorate with abundant icing sugar.
