AMARETTI BISCUITS

Today we offer you a typical sweet of the Sardinian tradition, the Amaretti! 
Have you ever tasted them? They are delicious and their preparation is quite simple, but you have to pay attention to a couple of details to get an optimal result.

Small trick: it is recommended to peel the almonds at least the day before to dry them well without using the oven which could compromise their quality.

Ingredients:

  • 500 g sweet almonds
  • 20 g bitter almonds (or 1 vial of almond flavouring)
  • 500 g sugar
  • about 6 egg whites
  • 1 grated lemon
  • a pinch of salt
  • sugar for the coating to taste
  • about 30 almonds for garnish

Preparation:

  • To peel the almonds, boil a pot of water. Turn off and remove from the heat, pour in the almonds and soak them for at least 3 minutes, then drain and run them quickly under running cold water . The thermal shock it will allow the cuticle to come off quickly. Then, put the almonds in a clean tea towel and rub them for a few seconds. In this way some almonds will already be peeled. Then peel the almonds one by one, pressing lightly on one of the two ends (the round one, not the pointed one) so that it comes out of the skin. Place the peeled almonds on a clean, dry tea towel, spaced one from the other without overlapping them. It is very important to let the almonds dry well before using them as already explained. Or if you really can't wait, let it dry in the oven at a temperature of 150° degrees for 3-4 minutes.
  • Grind the sweet and bitter almonds and then add the sugar to obtain a homogeneous mixture.
  • Beat the egg whites separately without whipping them, add the lemon zest and gradually add to the almond and sugar mixture. Mix well, it should have a consistency that is neither soft nor hard. Cover with a tea towel and let it rest for half an hour.
  • Using your hands, form the dough into balls slightly larger than a walnut and roll them in the sugar. For this operation it is better if you moisten your palms with water so as not to stick.
  • Put the balls in a pan with parchment paper, flatten them slightly and decorate with the almond.
  • Bake in a preheated oven at 180° for about 25 minutes until the bottom of the amaretti is lightly browned.
  • Remove from the oven, let it cool and enjoy! You can keep them in airtight containers for up to a week.
